Foods that are high on the glycemic index are not typically good for people
who want to lose weight. This is because high GI foods typically stimulate
rather than satisfy hunger, thus causing us to eat too many calories.
Many high GI foods are also relatively energy dense.

Despite their high glycemic index rating, potatoes are very filling for
a couple of hours after eating. The main reason for this seems to be that
potatoes are comparitively low in calorie or energy density - to eat the
equivalent of 250 calories you have to eat 6-7 medium size potatoes.
Potatoes May Trigger Rise in Appetite
After a Few Hours
Some studies have shown that 3-4 hours after eating, potatoes lead to
a rise in the stress hormones cortisol and noradrenaline. This typically
occurs after a "spike" in blood glucose levels, and usually
leads to a re-stimulation of appetite, which is not good for weight reduction.
Best Potatoes For Low GI Weight Loss
Diet
The best type of poatoes to eat for optimum low GI weight control is new
boiled potatoes or sweet potatoes, both of which have a moderate GI value.
Even though fried potatoes or french fries may have a moderate GI value,
they are calorie-dense and not good for weight loss.
Adding Vinaigrette Dressing to Potatoes
For Better Weight Control
By adding a vinaigrette dressing to your potatoes, you obtain many of
the weight loss benefits they offer without the hunger rebound associated
with high GI foods. This is because the acetic acid in vinegar tends to
slow down the emptying of the stomach, thus lowering the glycemic effect
of the meal/food.
