Acid Lowers GI Values
The presence of acids slows down the emptying of the stomach and digestion
and lowers the glycemic index of foods/meals.
Sourdough Bread
Thus, for example, sourdough breads have a lower GI value than most breads
due to the fact they contain lactic acid and propionic acid, the by-products
of the fermentation process.
Vinegar and Vinaigrette
Vinegar (acetic acid) also reduces the glycemic index of a meal or a food.
For example, adding a vinaigrette dressing to a meal (4 parts vinegar:
2 parts oil) can reduce glycemic index by up to 30 percent.
Lemon Juice or Any Citrus Acidic Fruit
Citrus fruit contains citric acid and therefore is also useful for reducing
the GI value of a meal. For instance, adding lemon juice to mashed potatoes,
slicing a lime into food, or eating an orange immediately after a high
GI value food can slow down the glycemic effect on your blood glucose.
