Steak and Salad - Easy Barbecue Meal Suggestion

Diet Recipe Ingredients

1-1/2 pounds beef steak, fat trimmed
2 medium sweet onions, cut into small wedges
6 medium Italian plum tomatoes, cut into wedges
4 ears corn, cooked, cut into 1-1/2 inch pieces
1 medium red bell pepper, sliced
Fresh Herb Vinaigrette (see recipe below)

Yield: Makes 6 servings

Diet Recipe Cooking Instructions

Barbecue steak over medium-hot coals to taste, turning halfway through cooking time. Slice steak, diagonally across grain, into 1/4-inch slices.

Combine sliced meat and vegetables in shallow serving bowl. Pour dressing over and mix. Serve immediately or refrigerate and serve chilled.

Fresh Herb Vinaigrette

Diet Recipe Ingredients

3 tablespoons olive oil or canola oil
1/3 cup red wine vinegar
1/4 cup water
2 tablespoons fresh lemon juice
1 clove minced garlic
2 tsp sugar
1 teaspoon dried sage
1/2 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried basil
1/4 teaspoon salt 1/4 teaspoon pepper

Yield: Makes about 3/4 cup

Diet Recipe Cooking Instructions

Combine all ingredients in covered jar; shake to mix.

Serving : 1/6 recipe (3 oz. meat) with 2 tablespoons vinaigrette.

Nutritional Facts Per Serving

305 calories, 25g protein, 18g carbohydrates, 16g total fat, 5g saturated fat,
56 mg cholesterol, 3g fiber, 255 mg sodium.
